For your summary of the interview, if you would like to list the questions and responses that is fine. The remainder of your paper should be in the traditional paper format. If you would like to write the entirety of your paper in the traditional essay format, then that is also fine. Regardless, APA formatting should be used throughout with in-text citations and a reference page.
