You will have the opportunity to complete three case studies in this course. For each case
study type your case study responses utilizing complete sentences to convey your thoughts thoroughly;
please number each response so that it matches the corresponding question being asked.
Below is the first case study:
Case Study #1 – School Lunch Program
Paul Fisher is the Nutritionist responsible for the school lunch program at a large urban high
school with over 3,000 students. In the school, there is a farm to table approach being utilized
to reduce processed foods.
In the first 6 months on the job, he noted that some students did not eat a well-balanced diet
and were discarding large portions of their meals. This was leading to an increase in food waste.
Paul feels the students need nutrition education regarding a well-balanced diet and the
importance of the farm to table approach being utilized at the school.
Before planning his nutrition education materials and presentation, he decides he needs to
identify what seems to be influencing students to select less healthful food choices.
Answer the following questions thoroughly:
1) What approaches can he take to assess the reasons why high school students are not
eating nutritiously?
2) What information should he collect? List questions that could retrieve that information.
3) What are two potential nutrition problems that could arise from the students not eating
nutritious, well-balanced meals?
4) Using the prior problems stated in the above question, generate three performance
objects, one for each domain of learning (pg. 281-296).
5) What do you think would be the best domain(s) of learning used when educating the
students?
6) Why did you choose the domain in #5 above?
7) What are two approaches to nutrition education he could try with the high school
students?
Your case study responses should be your individual work to demonstrate and reinforce the
knowledge and skills gained in nutrition education and counseling.
Once you have completed the case study, submit it in the “Case Study #1” Assignment portal in Unit 2.
